Because the Mentats can easily be explained as human computers. Once the viewing audience can accept the premise of the Butlerian Jihad, it becomes easy to just relegate the Mentats as useful side characters but not necessary to the films plot. Paul was being trained as a mentat before the other abilities presented themselves. In the subsequent novels, Paul is even known as the “Mentat Emperor”. It is a shame they will exclude this theme completely.
