All this is entirely possible, but if I don’t know for sure, I don’t know where else to go as far as a medical standpoint

As long as he’s within a healthy weight range for his age (obviously check with his peds) then it’s likely not an issue and him just being more aware of his weight.

Is he outright skipping meals or starving himself? Or just not finishing his plate anymore? What is it specifically that’s making you feel like there’s an issue here?

IMO, it's not medical, it's conversational. Sit with your boy and talk to him to show you're concerned and care. And eyeball him so he knows he's not excused until he spills. Maybe a neurologist appointment is a bit premature.
