Simply self-identify to whatever will work.
Their rule is that they can't tell you what you are. Use it against them.

All they have to do is flip it right back on you. Don't hire you because you're clearly white, but acknowledge that you're "black", and then claim "See? We don't only hire black people. We didn't hire that guy and he's 'black'"...
