There may be some experts who can chime in on this topic, but until then I'll share my anecdotal .02 cents. When I started, I had the same thought process as you (which very well might be the true right way to do it). So, I worked on my game until I got to ~12 handicap and went to get fitted while I was swinging it well.

The first 3-4 months with the new irons were awful. I was lost again and maybe I should've waited longer to get fitted, idk. Fast forward to today and I'm playing well again thankfully but that certainly was no "honeymoon period" intially after getting fitted into new clubs.
