Unless you're willing to get on a plane, your options are limited. Austin and the Texas Hill Country are a little over 7 hours. Memphis and Hot Springs would be in range.

Wimberley (just picking a random hill country spot) is all of 530 miles from New Orleans. That’s around 7.5 hours without stopping and minimal traffic.
With a stop and Houston area traffic, it is more than likely 8 hours or a little over it.

Was going to be my suggestion. It's about 7.5 hours though.
But a fair bit to do. There's lake activities, decent restaurants, magic springs, bath houses and breweries, etc.
