Good read. I love sauce piquante, but I have never hade the turtle version.

Are snapping turtles better to eat then softshell and others? I know some people that love turtle and I've had it its just like dark meat chicken, rabbit, etc. when stewed IMO. Nothing amazing but good. I just don't understand why you'd poach a snapping turtle when you can catch a bunch of other turtles legally?
