North to south would be more tactically sound. When moving N to S you reduce the chances of the enemy encircling you from the back because you have the Med and Israel on your flanks. When going from east to west you leave an enemy-occupied flank which has to be protected.

In any event, it isn't going to be a nice straight line anyway. It is going to be slow going I would imagine, maybe a month or possibly much more to take Gaza City and everything north of Wadi Gaza. Hamas has almost certainly built up a lot of home field advantage.
