A fancy burger with a low quality, unseasoned patty isn't better than a diner burger that is cooked right and well seasoned. But, a higher end burger that is executed well with awesome meat, quality cheese, and better toppings absolutely deserves a place in the conversation even if those toppings are fancier.

that's not what i'm talking about.

When i say a fancy burger, i simply mean something a bit out of the ordinary.
For instance, Guy Fieri's Mac and Cheese burger, which is awesome, and enough burger for 2-3 people to eat.
or a burger with homemade pimento cheese.
or a burger with some pork belly preserve, blue cheese, onion rings and jalapenos.
Are those burgers good, probably so, but when judging best burger i think you should just be talking about a standard burger with standard condiments. standard doesn't have to mean yellow american cheese and bunny bread. using a potato bun and cheddar or pepper jack or white american as your standard is acceptable.
That's what goes into what's a good burger or not, what you are using as your standard ingredients, and when i say standard ingredients, i mean bun/meat/cheese/lettuce/tomato/onion/pickle/mayo/mustard/ketchup.
what i think makes Curbside and Burgersmith so good is the pickle. I don't think Curbside makes their pickles anymore but i know Burgersmith does, and it's something they are very proud of. I actually got the recipe for them and i'm going to try pickling the cucumbers i've been picking from my garden this week with it.

but the specialty burger definitely has it's place in the conversation, it's just not what i would use as give an example of who has the best burger in town.
