Will add:
KSC is very accessible from Orlando. Check to see if any rocket launches are scheduled while in town.
Brevard Co. beaches, e.g. Cocoa Beach, are well run. If unfamiliar with the area, Lori Wilson Park (I Dream of Jeannie Lane) is a good starting place.
Waves are better in the Atlantic; beaches are better on the Gulf Coast, e.g. St. Pete Beach.
A little out of the way but Sebastian Inlet (Brevard Co. - Indian River Co. Line) is a great place to get away from it all.
Finally, has to be a mention of golf. Central FL has a bazillion courses. The days will long and the snowbirds far to the north so you can play some really nice courses fairly cheap. My favorite is Orange County National. World Woods (recently changed names) in Brooksville is another.
