It's a good idea to stay in Oakhurst. If you are willing to consider doing an additional day in Yosemite you would have time to spend at Bass Lake which is just another 15 minutes east of Oakhurst. Rent a boat and enjoy the weather and water. You can eat at The Pines for a nicer dinner. The Great Outdoors was filmed there for reference. Coming down the hill I'd stop and eat at Heirloom in Fresno. We go there fairly frequently. It's locally owned and is pretty darn good. It is just off of the 41 at the Friant exit.
For your stay in Three Rivers I'd check and make sure that road conditions and your lodging are in the clear. That community was heavily damaged in the flooding a couple months back.
The Giant Sequoias should be seen. You can also make a trip to Hume Lake which does run summer camps but they have food to replenish yourselves.
Are you planning on taking the 152 or 198 to get to the 101 & eventually over to Big Sur? If you're taking the 152 across I'd go up towards Watsonville and stop at Gizdich Farms for some homemade pies, lunch and apple cider. There is a picnic area and it is family friendly for sure. There is a huge U-Pick farm where you'll be able to get your own berries if you want. Phil's in Moss Landing is good for seafood with beach access and I think there is live music too. Check out Point Lobos for a fairly easy hike with a lot of scenic views for pictures. Mountain Lions have been seen there on occasion but just be aware of your surroundings.
