We are staying at Disney. We didn't want to move just for 1 day.
My 10 year old loves Harry Potter, so we figured we would take 1 day to do some of the HP stuff.
It's basically the same price for park hopper with no express passes or 1 park with express pass, which is what I'm trying to decide upon.

1 park with express pass is not worth it. 1 park in a day is easily doable. I'd do the hopper and ride it out, we've done both parks in a day and rode most everything. A few of the rides in Universal are similar indoor simulators so if you ride one, you pretty much ride them all. Islands of Adventure is awesome, Hagrid's is the only line that's pretty long all day. Just hit that first and get it over with and you can finish the rest.
