Any decent cookware with SS cooking surface is going to have aluminum (and possibly copper if you want to jump up in price) in the core clad or sandwiched between outer and inner SS surfaces. The Al does not come into contact with the food.
Straight out SS is comparatively a very poor conductor, the cladding process is what made All-Clad revolutionary at the time.

Got ya, so Demeyere is better or just heats up quicker? Sometimes an easily heated cookware is worse due to being too sensitive and leads to burning.
