Perez finished outside the top 2 eight times so far this year while driving the car that has won every single race with ease.
Honest question, do you think Perez car is just as good as Max's. Max has no advantage at all? If that is the case, sure, a change is fine. I personally don't believe that to be the case.
Most of his non top 2 finishes were a result of qualifying, which is on him. But I don't think there is a driver that you could say "ok this guy would definitely finish in 2nd place every single race." If Max has a DNF and it happens to be a week where Checco isn't in 2nd place then that is enough to let him go? It's hard to imagine Max even having a DNF, it happen to be a week Checco doesn't get second, and Red Bulls's reaction is "OMG the house is on fire! Checco started the fire!"

And assuming RB continues to have the same advantage over the field in the coming seasons is not realistic. Perez will cost them a lot of points as the field closes up on RB.
How long does "the coming seasons?" I would find it much more unrealistic for Red Bull to lose an advantage/be challenged while Checco is under contract than I would for them to lose the advantage. Max is already having a more dominant season than Lewis ever had and I can see them being as good for 5-6 year stretch. Checco won't be there that long, but I'd be surprised if he ever finished lower than second overall for the rest of his current contract, much less cost them any critical points.

Could argue that Perez already cost them one championship.

Yes.
Perez has even said they are identical.
Do you think Racey Spice would intentionally give the Mex an inferior car, guaranteeing poor qualifying and race finishes?
Max doesn't need the help. lolzzz
