Your beach comparison is not a good one. These are cities that are hundrerds of years old with many sites to see and things to do. The locals don't do those things. No offense, but with three young kids it just sounds misrerable. I think you'll find your actual travel times are much longer than you think with getting to the airport early, checking in and then going through customs in each country.
I can see why you wouldn't want to spend a week in the Tuscan countryside but in a city there are just so many things to do usually. Anyway, enjoy your trip.

Possibly, I'm aware it's a risk and there will probably be a hairy day or two in there but they are pretty good travelers and overall I think they will do well.

Unless it's changed in the last few years, and I'm pretty sure it hasn't, this is not a thing in Europe.
