Yeah that’s dumb. It’s simpler than that. He tells her he hasn’t enjoyed cooking for people in years, her order reminds him of the joy of cooking. She gave that to him and also gave him a way out that was in line with the concept dinner, so he let her go. It would also make no sense to me for him to try and kill her later with the “poisoned” meat. She’s not even supposed to be there so he’s not sure what to do with her from the beginning. He wants her to fit into a category of “server” or “taker” but she doesn’t fit neatly in either one. He was struggling with what to do with her from the beginning, but it would ruin the concept menu he had been crafting for months (or year) if he just let her walk out.
I loved the movie. Fiennes, Taylor-Joy, and Hoult were great. Hoult specifically nails that character. It perfectly lampoons all of those people that exist in the culinary world, these holier-than-thou chefs, the cult like atmosphere of high-end kitchens, the annoying foodies and food critics, and even the dumb travel food show celebrities. I wouldn’t say much of the messages it gave about the food world were exactly new (I think in many ways Pig with Nic Cage said a lot of the same things about high-end dining being soulless), but it was a unique and fun presentation.

He was so infuriating at first. I was like no one is going to react that way when people are being killed around you!
But then the reveal that he knew and still went was an ahhhhhhhh moment.
