Does it have anything to do with them being frozen and then thawed?
I’m just curious as to why this happens or how to avoid it because it sure does make the ribs ugly. And why doesn’t it happen all the time?

Most pork is frozen in the supply chain at some point so I doubt you freezing it had anything to do with it.
