I use them for bacon poppers.
Season with your choice of seasoning, cut fresh jalapeño in half fill with cream cheese and pepper jelly. Slap deboned dove breast on it wrap bacon around it and cook it on the grill.
One other thing I’ll do for a quick appetizer is season with chupacabra rub and put BBQ sauce on them. Let them marinate for a couple hrs then throw them on a hot skillet or griddle for 1 to 2 minutes per side. Put them on a plate as finger food while cooking the main meal.

Depends on how many you have, just a couple wrap in cream cheese and bacon and jalapeños. It may be overused but man they good.
If you have a lot ,,, smoke them for 2hrs then make a gumbo or a jambalaya or pastalaya.
The last is prolly my favorite,, make a gravy like you would for grosbec or robins and cook some rice
