Instapot is convenient since it's automatic, but it only goes to 210 psig (240 F). A normal pressure cooker cooks at 215 psig (250 F) which gives you faster cooking at higher steam pressure. With Instapot you sacrifice convenience for faster, moister cooking. We use a normal pressure cooker for this reason.
