Great post. Man, I'm jealous. I wish I could find some kind of BBQ map of all the good spots in a given area of Texas. Say, if I'm in the Houston area, try all these places. Or maybe Austin. Or Lockhart. I've never been to any of them and am a huge Central Texas BBQ fan so I'd love to say leave on a Thursday and drive to wherever and hit all the good joints over the course of three days.
I've heard enough talk about Austin to know which places I'd like to hit but that's really the only one.

Houston is a large place and all sprawled out. Traffic is a pain so be mindful of that.
On the good side of things, Houston is the BBQ capital of the world. Some top-shelf joints in and around:
The Pit Room
Killens (Pearland)
Roegels (Voss Rd location)
Corkscrew (Old Town Spring)
Brett's BBQ Shop (Katy)
Truth
Pinkertons
Harlem Rd (Richmond)
Brisket House
Some others I've not yet been to but are reputable:
Feges (two locations)
Tejas (Tomball)
Blood Brothers (Bellaire)

Texas Monthly has a bbq interactive map app. Shows you top 50 or whatever filter you select. I’m on the non-fan of Interstellar. My trip was not long after the lost came out so they were still scaling up, but just wasn’t a fan. Actually enjoyed My first stop of the day more, Brotherton’s in Pflugerville. John is a cool guy to talk to as well.
Above poster was right about Rollin Smoke. Easily in my go to every visit places. Actually talked to Kyle the other day and he said the new spot is killing it but once again worried about development. CM Smokehouse is good and different. Can’t pass up L&L either.
ETA: If you are in Austin and don’t head to Seguin to Burnt Bean for breakfast on Sunday you are doing yourself a HUGE disservice.
