Would you say interstellar is better than Terry Blacks? I love Terry Blacks but have never been to Interstellar. I

IMO, no.

To explain: TX Monthly BBQ ratings underwent a paradigm shift the last time through. It, IMO, it gave too much weight to what was done with the smoked meat rather than the smoked meat itself.

Interstellar does some different and interesting things beyond the meat itself. But as for basic brisket, ribs, etc there's not much difference. Terry Black's pork ribs were among the best I've had. And I thought the brisket was slightly better than Interstellar's. But make no mistake about it, you're mostly splitting hairs. They're both great joints.

Have only eaten once at each so hopefully others will weigh in.

Would love to hear ruger's take.

I agree there was a shift, but I also believe it was out of necessity in order to have a ranking. There are tons of joints that are neck and neck when it comes to traditional Texas BBQ so how can you differentiate and rank them? Creativity and sides IMO are where the hairs are split.
