Use then just like any other nut.
I make a roasted cauliflower with toasted pine nuts and golden raisins. It has a lemon caper vinaigrette. If your audience doesn't care too much for the flavor of capers, you can fry them first to subdue the flavor. It's pretty good
I also do a basmati rice, pine nut, and pomegranate pilaf with mint that's not terrible.
They make a nice crust for fish.
Lastly, use them in sweets like pine nut brittle. Eat as is or use it to top other desserts.

I do use them in an herby or Mediterranean rice sometimes.
