Perhaps to make up for the ice that melts when chilling the ingredients via shaking or stirring?

Martinis and other high proof cocktails such as a Manhattan depend on a little bit of the ice dilution from either shaking or stirring to smooth the drink. Otherwise it would be all harsh booze. Since you are blending and chilling without the ice have to bring that water back in somehow.
