You sir, are incorrect! Billy’s has the best boudin in South Louisiana, hands down! The meat to rice ratio, the texture, the spices, etc., everything blends together so well. And the boudin balls…the outside is like fried chicken skin and the insides are just pure goodness. I don’t get cracklins often, but am never disappointed when I do get them. I know the lines at Billy’s can be long, but it’s worth the wait. Also, don’t you think there’s a reason why there are usually long lines at Billy’s? Because they’re the best.
