In Mentour Pilots' video discussing the actual event, you have Michoud employees chiming in. Boeing only replaced one of the engines and flew the damn thing out at a stupid climb rate.

Unloaded, those 737's, even the older models, have a very prominent performance envelope. They love to climb with no passengers and a small fuel load.
