This is my 3rd week of intermittent fasting and lifting weights. I'm down 3lbs but feel even skinnier, probably due to lifting weights maybe my weight didn't drop as much.

Muscle is much denser than fat. So it's likely you may maintain a similar weight for a while yet still lose fat and look skinnier.
