For the game tonight, I made a pot of Corn Maque Choux w/ shrimp and some andouille from Jacob's in Laplace.... looks something like this when done:

Good job Coon...I like the flavor of tasso and crawfish together....Good way to put it together.

i fried up the tasso in a pat of butter to get some flavor and poured it all in when the grits were done. came out better than i expected... rich, though. next time i'll use half heavy whipping cream and half half&half.
