Ryk Brown is writing a serial type space opera. The Frontiers Saga. The books are short reads, but he has over 25 of them out. He usually publishes one every 3 months.
Renegade Star by J.N. Chaney. 13 books so far. Very Firefly on steroids.
If you want to get into the Firefly type books:
Omega Force by Joshua Dalzelle is pretty descent with 11 books.
If you want some page burners B.V. Larson writes the Undying Mercenaries Series. They follow James McGill, and are fairly formulaic. They still make a fun read with twists.
Craig Alanson has Expeditionary Force. I think there are 8 or 9 books out right now. They started off fairly strong, but I feel like he is milking the idea now.
Most of these above aren't going to change your life, but they are light reading that you can burn through and enjoy.
The books like Hyperion are good and I like them, but they are in a different vein than the ones above.
The Red Rising books are a great series I think.

Revelation Space series by Alistair Reynolds is my favorite that hasn’t been mentioned yet. There are 6 or 7 novels and several short stories that are all quite good.
I’d start with the main book's (revelation space, redemption arc, absolution gap) and move on to the others

Looks like pretty solid ratings on GoodReads, I'll check those out

The Bobiverse series is one of the best I've read recently. We Are Legion (We Are Bob) is the first in that series.
Already mentioned Pandora's Star is my favorite all time.
The Collapsing Empire is another recent series by the same author as the Old Man's War series.
Did anyone mention The Three Body Problem?

Three body problem just didnt seem like space opera to me much - i was thinking space opera is more just like pure military sci fi type deal.

Would Columbus Day count?

Space opera can have different definitions based on who is talking about it, but typically it involves drama in space among space faring civilizations and space battles. It doesn't have to be pure military based.

Got ya, I had a vision of huge naval battles and that kind of thing as my space opera criteria

A good one with fairly decent space naval warfare is the Honor Harrington books by David Weber.
