Not a Katrina book, but it could be viewed as a prequel maybe.

Beyond Katrina by Natasha Trethewey is a good memoir talking about Katrina's effects on the Mississippi Gulf Coast. And there's 1 Dead in Attic by Chris Rose. It's a collection of the Time's Picayune columns written in the immediate aftermath of Katrina.
