During an internet Q&A session on Monday, LSU interim president Thomas Galligan Jr. said that they are “absolutely” planning on being open in the fall, although some large classes will likely be online.

Galligan Jr. also said that he hopes football and other sports will be back as well.

I don't know that the "entire" reason was fear of overwhelming hospitals but sure it was a big reason.

He's right. We absolutely should have school and football. The entire reason for quarantine and social distancing was because of concern we would overwhelm the hospital system. Now we see that we won't. There is no reason we can't have normal football in the fall. There will still be some risk for those with pre-existing conditions such as obesity or diabetes, but they will need to be more careful.
