So my custom chef's knife came in

And here it is
The guy did an amazing job. I've used it a few times and I love it. Its carbon steel and 7" with 2.25" at the heel.

Looks nice. I don't trust myself with a carbon steel blade. I have a hard enough time keeping my stainless from rusting

Yea its a tad bit heavier than my old 8". Also will have to get used to not having a bolster.

my 2 favorite knives are carbon steel. Both of them will take an extremely sharp edge.
both old Chicago Cutlery butcher knives. Old school and over 45 years old. What better for an old fart?

Yea I knew the carbon steel would be quite a bit heavier than my old one so i shortened an inch. I dont even notice the extra inch lost. I was looking into Japanese steel before this but figured a 20 degree edge would be more versatile and help with tough stuff.

Do you use it?
A knife that nice shouldn't sit in drawer. If all you're gonna do is slice doughnuts in half on the weekend for your wife and kids, just use what you had.

Quick question.
While my acquisition isn't as sexy as this one, I did just receive three new Wusthof Ikon Classics. I have a Wusthof knife block and a magnetized strip on the side of a cabinet near the sink. Which is better for storage in most people's opinion?

I think your block would be fine. Since he had his knife custom made, I was assuming he'd need somewhere to store it. Somewhere other than a drawer.
