Eat or Toss? - Episode #296

I wanted to make some red beans Monday, so Sunday I set out 2 lbs to soak overnight in salted water as recommended by America's Test Kitchen. As fate would have it, I was called out to work before I got it started and didn't get back home til it was too late to cook.

Now, I've had these beans soaking for close to 48 hours. There was a few little patches of foam on top when I uncovered to pot. Are they safe to use?

I can't imagine there would be issues, but I'm not sure I've ever said toss to one of these

Smell test podnah. If they aren't rank then I would just empty the water, wash off the beans again then cook immediately.

I think you will be fine. I'm more likely to worry about meat or dairy products going bad, not beans.

I agree. Wash em off and cook. You're gonna bring them to a boil anyway...

See, I was thinking that issue might be diminished.

I thought I read that toxic substances could be created that would not go away with cooking. I think that's how it is with botulism - you can kill the bug by cooking, but there's still bad stuff that will mess ya up.

Cook & eat. Note that I'm usually on the firm side of "toss it", but this is the case of a natural, dried food which has been soaking at room temp. At worst, you've grown some yeast in the water (accounting for the foaminess on top). Cooking will kill off whatever has been forming. Discard the water, of course....

Plenty of foods are soaked & sprouted, then cooked before consumption. Sprouted grain flours, barley is malted to make beer, etc.

As long as they don't smell funky they're fine. I know a woman who soaks hers until they start to sprout a little. No shite. She changes the water every day but she swears they come out better that way. And no, I haven't tried them.

I accidentally did this in college once. Left them out for 48 hours and they started sprouting. The batch turned out just fine though.

They should be good. Not that a new package of red beans will set you back much. If you're really desperate, grab some from the donation bin on the way out of the grocery store.
