Either cook it down from the beginning to where it's unrecognizable or throw it in late.

I have also found the bagged frozen okra to be less slimy for some reason.

Add it to the trinity when you saute the veggies in the roux.

Brown the okra. Rinse with water in a strainer. Throw on stove again. Takes all the slime off.

Anyone else grow up with Okra gumbo as a totally separate type of gumbo? We use to chop it up and cook it down with an onion. Add some water then let it cook down a couple times. Finally Add a little tomato sauce to kill the slime. This was then used as a base for a gumbo. I still like to make this during the summer since it is a much lighter gumbo. I never had okra in a regular gumbo until I came to Baton Rouge.

1) Wash thoroughly
2) Cut with a very sharp knife.
3) Brown the okra in a seperate pan.
4) Add okra at end of gumbo.

I buy frozen cut okra, then dice it up further, then add right after the trinity. Simmer your gumbo for a long time. The okra will 'cook out' and you won't have slime.

I must be in the minority because I actually like the slimy okra in my gumbo.

I don't like frozen. I always wind up with fibrous, stringy pieces. I am spitting out that crap way too often

Smother it first.

I cook mine in the crockpot with a little oil and vinegar. When I add itto gumbo its barely recognisable.

I buy the whole frozen okra and chop it up myself. The whole okra is smaller. I like that better.
