re: Swamp pop fest Jambalaya cook off check in - pochejp
I do, I will try without next time, thanks for the tip
Just add what you would normally use when you pour in your stock. I messed up a 10 gallon jamb one time for a birthday party at my dads one morning by burning the damn Louisiana hot sauce when browning my onions. The burn temp ...
Question: what's the Gonzales connection to swamp pop?
Just a lot of swamp pop musicians live there. Van Broussard, Kenny Fife, Kane Glaze and Coozan, Kenny Cornet, The Sanchez's and many others from Gonzales/St.Amant area. I'm 50 years old and can remember it being a big thing t...
You are right, the black specs are my Achilles heel, I just can not get rid of them
Are you adding hot sauce when browning meat or onions? Hot sauce will burn on the side of the pot and make black specs. The rice looks perfect. Good job. How did it taste? ...
A reporter asked a Supreme Court nominee for her opinion on a candidate for president...trust me, that person should know better. That is minor compared to Ginsburg though. It is Indefensible.
I've used Cajun Country and been very impressed with it
So have I and it cooks great. I just don't see it in the small local stores I live by to buy it. They all carry the Mahatma extra long. I do support Louisiana rice growers when I can....

re: Need help with Jambalaya - pochejp
I was using Zatarain's parboiled.
There is your problem. Use Mahatma extra long grain and it will pop. Don't cook that much water out before covering. Boil the rice until you notice it starting to increase in size then lower heat and cover....

You sure the motor isn't locked up? The starter simply may not be able to spin the engine. See if you can turn it by hand. If you can then you're ok there. It could be several things. Starter, battery or solenoid. ...

re: Jambalaya ingredients question - pochejp
Lamendola's. Has all you need. No pork stock for sale that I know of. Chicken broth is suffice. I use D&J smokes sausage. Best I've eaten. LeBlanc's Cajun seasoning is not part of the LeBlancs grocery stores. Kim LeBlanc out of St. Amant makes it. Sells it by the gallon at Triple SSS and Murray'...

re: Secrets to a Great Jambalaya - pochejp
Well i'll give my ideas of how to make a tasty jamb. You didn't mention what size pot you were cooking so i'll assume you're cooking a 6 quart jamb. If you can find pork temple meat get some. 3 to 4 lbs for that size pot. If not buy a boston butt pork roast and cut into 1" to 1.5" cubes size pieces....
