Pimento Cheese

Has this wonderful culinary classic met it's end?
My grandmother used to make it for us for sandwiches all the time, yet I haven't seen it anywhere for years. If I hadn't watched a show on the Food Network tonight that had it I wouldn't have remembered it.
I love it and miss it. Do any of you eat it regularly? Does anyone have some good recipes to share?

My mother in law had some last weekend. She made it.
I think it was just good cheddar, pimento, all of the pimento juice/brine, a little mayo.

If you're in the Birmingham area, Edgar's has some good pimento cheese. They sell it by the pound too.
I still make it from time to time. It's good as a snack and also great on a burger.

I love it as a simple comfort food. My wife's grandmother always makes pimento cheese sandwiches specifically for her grandfather on Christmas. Most of the rest of the family doesn't care for it, but I always tear it up.
I'm kinda surprised I haven't seen contemporary southern chefs do some creative interpretations of it.

You can find it at the grocery store but it does not look very good. Newk's sells it and it is pretty good. Actually made toasted pimento cheese sandwich for dinner tonight with Newk's.

In BR Calvin's has pretty good PC next to the chicken salad. I chopped up some jalapeños, stirred them in, very popular.

I also wonder why modern chefs haven't included it on more dishes.

One of the foods that reminds me of my childhood. Even better are grilled pimento cheese sandwiches, cooked on a griddle with a bit of melted butter.

Pimento is a mild pepper. It's close relative is the bell pepper. They are often overlooked, but tasty.

Combine grated sharp cheddar, crushed pimentos, and some mayo with a fork. Use the grater to "rice" about a 1/4 of a small onion. Add that, juice and all. Put it in the fridge to set. Get some white bread, and you are ready to marry or bury someone.

I love pimento cheese. I can eat it with a spoon right out of the container. I grew up having it on my sandwiches though

Without some Japs in it is just creamy cheese garbage. With Japs in it to the right degree of flavor in it becomes a pleasant ingredient for sandwiches. Look in the dairy or deli section of a store or ask someone that works at it, the stuff is still on the shelves just not displayed well.

My grandmother made it with rat cheese or hoop cheese, my mother made it with medium cheddar and my wife makes it with a block of American cheese. I eat all three.
Whole Foods has a good spicy one with jalapeños. I also grew up eating them from Joe D's when they cost $.50 and I would eat their egg salad sandwiches on Friday which cost the same.
Wife and mother make it about once a month. They also make canned tuna fish about once a month which is a whole other discussion. I love that too.

I still make it on occasion, but I've never had any store bought or catered pimento cheese that came close to my mom's recipe
