Mom mom makes a dank homeade pimento cheese that has very finely grounded pecans and black olives in it. It doesn't change the flavor up a whole bunch but the tiny pieces of pecans adds a nice texture to it

You should be able to make it. You're gonna want that liquid the pimentos come jarred in added to the mix. I'm not kidding about that.
People that are saying add jalapeño and such are missing the added flav from that pimento liquid.

I've never had the japs in with pimento cheese. But I love pimento flav. So, not sure if that would ruin it for me. I'll start with a smidgeon at first.

They don't overpower the flavor. It's a complimentary kick. I use fresh. I find that if I roast them, the kick is a little stronger, but roasted has such a grand flavor.

Leblanc's in Gonzales makes P Cheese sandwiches. Obviously, homemade would be better. Love to eat them but feel so guilty because I am 55 pounds overweight and have diabetes.

Agree with this whole thread. No good pimento cheese out there these days.
There is only one and that is from the sweet grass dairy in thomasville, ga. Absolutely amazing craze it whenever I go to the town to visit

Well I don't think this thread says there are no good pimiento cheeses out there.
First it's all about where you are from and what you grew up on. Mine is several but for the most part they are shredded cheese, pimentos, pimento juice, mayo, salt and pepper. That's about it. I've had sweet ones that I hate and spicy that were too hot. But, there are some really good ones out there. Central Market, Calandros, Whole Foods all have good ones.

Forty plus years ago when I was learning the basics of cooking that was just a homemade thing not from a store. Cheese straws(a cookie press was used to make them on a cookie sheet pan) kind of item in a cracker like form. They were very tasty for parties held at home.

I tore up a container of pimento cheese last night. It's so addictive! This one was one of the things I brought back from Blackberry Farm. They make theirs with an aged sharp cheddar. They used it to make a dressed up grilled cheese sandwich. I agree... I think it is underused.

Toast a piece of bread and then slather some of that Palmetto on it. Put it in the oven on 350 or low broil and it will get melty and puff up a bit from the mayo. Very nice.
