Best everyday spice that goes well with olive oil & bread dipping?

Been playing around with what I have in my cabinet and I haven't struck my palate yet. Anyone?

If it's good oil, it doesn't need any spices, salt kicks it up a bit. But if you're going to use a spice, I'd suggest Za'atar.

Garlic, rosemary, thyme, basil are my favorites. I heat the oil and simmer a bit. I use a sprinkle of finishing salt atop the bread.

I like za'atar also.

Garlic, basil, oregano are all good choices. The main difficulty in that game is picking good bread and picking good olive oil to dip it in. If you want anything else, go with good simple herbs/spices in just enough amounts. Oh, and maybe some nice coarse salt to sprinkle over the bread after its dipped.

Italian seasoning, cracked black pepper, sea salt. Maybe some garlic powder if you're feeling froggy.

Got some za'atar this weekend. Mix with olive oil, spread onto bread and toasted (Manakish).

I used the Ziyad brand:
