What is your favorite meat for rice and gravy?

I almost always use thin cut porkchops.. I think pork makes a better gravy than beef. When using beef I use top round.

Meatballs.


Substitute rice for noodles.


And make sure the gravy is a red sauce.

I did teal and andouille yesterday. Slow rolled about 6 hours. Twas fantasic.

If it is done right, a good pork roast w/ sausage makes a mean gravy that is very hard to beat. The trick is in the browning. You have to almost burn the damn thing to get that good red gravy. A touch of vinegar in the rice and boom. I think im gonna do that tomorrow.

Eta: a good beef chuck roast can make my knees weak also.

Rump or chuck roast is my favorite. Love pork roast gravy as well. A friend of mine bakes a beef and pork roast together. Darn good tasting gravy.

That is no longer meat and gravy served over rice. Have you ever heard of a thing called spaghetti sauce before?
