Lafayette and the surrounding area is definitely growing. Even noticed quite of bit of Texas tags when visited recently. What’s the draw? Stable economy with high paying medical/oilfield/tech/other jobs, cost of living etc.?

The main spice I've encountered in Lafayette food has been salt. I probably don't know the right places to go to, though.

Lafayette, and Acadiana in general are responsible for the best food La has to offer, it's what everyone outside of La thinks they are getting when they go to Nola, "Cajun" food, Nola wasn't really known for that until they hosted the World's Fair, hell they even used to serve bawl crawfish chilled

Move to Metairie instead. It isn't New Orleans and will be 10x better than Lafayette.

Edit - Sweet, it looks like I pissed off all the guys with the New Iberia haircut when saying Metairie is 10x better than Lafayette.

Bypassing that state income tax? Working somewhere in Texas but resident in LA.

You still have to pay LA state taxes. If you live in Louisiana it does not matter where you work. You are paying.

Lafayette metro is a great place to raise a family with low crime and close to some great coastal fishing.

Safer than most cities and more cultural identity than anywhere in Louisiana besides Nola. Pretty good job opportunities. However, economy is still tied to oifield.
