We always have a side plate of plain potato salad and french bread when we have gumbo. I take my spoon and put a little potato salad on it, then go in for the gumbo, every bite. It's a texture/temperature thing...and it plays off of the file so well.

Haha, I had the same response. Duh. Where would Cajun cooking be without patate etoufee (smothered potatoes), dried shrimp & potato stew, fricot, little new potatoes cooked with fresh-from-the-garden french cut green beans & sausage or ham, red potatoes in a crawfish boil, leftover boiled potatoes fried in bacon grease, and perhaps the epitome of Cajun potato-based dishes--shrimp boulettes (main ingredient other than ground shrimp is grated potato).

Ask any Cajun kid who ever bent his back to stoop over a freshly turned potato row how "few" potatoes are eaten in south LA. Close to the farm Cajuns can school you in fresh vs storage potatoes, the texture differences between the two, & which are best used in particular dishes.

I think too many folks' impressions of Cajun food is derived from restaurant cliches, a handful of TV cooks, and a few cookbooks. Beaucoup dishes & foods commonly eaten throughout Acadiana continue to fly below the radar of the wider food community.

Never heard of this until I started reading this board. Interested in trying it but I've never been to a place where it's been offered. I have a hard time believing I'd like it but I'd try it.

I first learned of it from some coonasses I hunted with back in the day. I don't see the big deal, but it taste ok. I wouldn't want it all the time with gumbo. Surprised so many do.

Worst post ever on this board..

Potato salad is served with everything from barbeque or roasted meats and rice and gravy to crawfish etouffee, fried fish and gumbo.. It's served in the summer, through the winter.. It's one of the most prevalent side dishes in Louisiana cooking.

Only rice. There's always potato salad at bbqs and Easter. No gumbo though. Maybe I'll bring some gumbo next Easter.

This brings up a good point though. Potato salad at my house has always been eggs, mayo, potato, and salt and pepper.

That's what we put stuff over. I can't imagine putting stew or gumbo over some wet potato salad with mustard and relish.

So no one in Baton Rouge has ever lived in Acadiana or the River Parishes and have Cajun roots?

This is an asinine statement. I've made gumbo's my whole life and I can guarantee if I made one and parked it in the middle of pots of Link's, Leah Chase, yours and your grandmothers you couldn't tell much of a difference between them. You may like one better than the other but that's simply subjective.

My mom makes some awesome potato salad that goes great with gumbo.

It doesn't have any mayo in it, lots of butter though. No crunchy stuff. Serves it warm similar to a german style.

No idea the recipe.

That's yet another reason I don't care for the potato salad to be IN the gumbo. It's usually cold and cools the gumbo down in addition to affecting the flavor unlike rice. A few dips on a spoon is good, but I'm really more of a rice gal.

I keep it on the side until I am halfway finished, then I'll combine them.

For a little extra pop, I like to mix a bit of prepared horseradish into my personal serving of potato salad.

Growing up, my mawmaw from Lake Charles would dip a spoon of potato salad into her gumbo. I thought she was a weird old lady.....now I do the same.

I eat my gumbo with potato salad in it. Never eat rice. I will also eat my gumbo over sweet potato. A little sweet and salty.

Love a baked sweet potato in the bowl in place of rice with an extra-dark duck and sausage gumbo.
