When people say they put potato salad in their gumbo what do they mean?

I've never had it this way and have only heard about it the last year or so...


Do they mean:
They pour their gumbo over potato salad substituting the potato salad for the rice

or

They garnish their gumbo by putting a scoop of potato salad on top?

I have seen the put a scoop on top of gumbo with rice already in it and just take a bite of potato salad and just dip it in the gumbo/eat.

7 step process

1. Make a bowl of gumbo
2. Put a scoop of potato salad on top
3. Take a bite
4. Throw bowl away
5. Make a bowl of gumbo
6. Put a scoop of potato salad on a separate plate
7. Enjoy

I've cooked/served seafood gumbo at a large festival in rural south LA every year for the past 40 years...customers can buy a serving of potato salad to go w/the gumbo. About 1/3 of sales include PS...2/3 get just the gumbo. Festival patrons are primarily locals w/in a 1-hour drive distance, not tourists.

Most people who eat PS w/the gumbo alternate bites between the two...a minority plop the PS right into the bowl with the gumbo. A smaller minority ask for PS in place of rice.

The only way to eat a steaming hot gumbo is with a spoon of cold potato salad

^This, people normally just put it in the bowl of gumbo so they won't have to handle a separate dish while eating.

I used to always use a separate plate for my potato salad and think it was very strange if people put it in the same bowl as their gumbo. Now, that I have tried it in the gumbo, I can't go back. It is difficult for me to eat a bowl of gumbo without a dollop of potato salad right smack in the middle.

I put it on the side but dip every bite of potato salad in my gumbo. It's delicious, frick the haters
