I almost forgot another locally made sausage that is fairly new. Freeman's sausage in Angie, LA is very good. They process deer but they also make their own pork sausage that is really good. They've got several different kinds to choose from and all of them are delicious.

Close to BR is Bergeron's in Port Allen. I also like Bourque's in Port Barre.

Hickory smoked sausage from Fernwood Grocery in Fernwood, Ms. Same recipe for over 50 years. Made in the small store butcher shop and smoked there....no preservatives.
