Make the crust, make the sauce, etc type recipe

Unless there's better

I've read this serious eats deep dish is the best

Thats ok. But the GOAT is Jim Lahey's dough. That olus a baking steel is all anyone needs to turn out some incredible pies at home

I use the recipe SR posted. Let that dough mature 24 hours and it is fantastic.

Get some canned San Marzano crushed tomatoes, or whole ones you crush yourself. Add a pinch of red pepper and a pinch or two of oregano and thyme and/or basil to it...maybe a little minced garlic and a T of olive oil. Spread on the dough and your good.

Nice

Mine will be eaten Sunday night. Plan on making the dough and probably the sauce Friday or early Saturday.

First time making a pizza this way. Seems like I've always used the chef boyardee recipe or some other easy method. But one of my goals on my summer break is to learn to make the best pizza possible. So Sunday's are now pizza day.

Put a good amount of corn meal on your stone (or pan) when you lay the pizza down. You'll probably need to spin it once during cooking to cook it evenly. Just have fun with it. And get the crust thin...it'll puff a bit during cooking. But when you get it right, it will have a crisp snap almost like a cracker.

Jim Lahey's recipe is the best I've ever had. I use the baking steel but it will work on a stone or cast iron.
It's terrific. The baking steel is one of my best purchases.

thanks for the advice, guess I'll be buying a baking steel soon. and looks like I'll do the Peter Reinhart dough first and then Jim Lahey's dough second. trying to create the best pizza possible will cause me to go through a few recipes before declaring a winner. may keep this thread updated on my progress
