Was a good dinner.
Oteece - Ribs were great. I didnt cook them long as I wanted them medium-rare. Shoulda seen the wife and i tuggin on them at the dinner table / elbow deep n grease. Was delightful.
As far as the corn maque choux..... I finely diced 3 cloves of garlic, 1/2 white onion, & 1/2 red bell pepper ... Sauteed in several tbs butter. Added 1/2 diced tomato and just a little bit of diced Jacobs Andouille.... Simmered these for about 15 min. I took 2 fresh ears of sweet corn and 2 small ears from crawfish boil and cut the kernals off (squeezing all the corn milk out) then added to the mixture... Simmered another 15 or so and served. It was very good. Due to the crawfish boiled corn and Jacobs Andouille - it needs nothing else if you let them marry. If using only fresh corn, i add salt/pepper/cayenne.
The salad was: Spring Mix, Tomato, Homeade Olives, Avocado, Sprinkled Homeade Italian & Blue Cheese Dressings, with a Baby Kosher Dill

Lazy taco salad- romaine, ground beef, refried beans, taco sauce, cheddar cheese, avocado, tomato, cilantro, and sour cream
Also put some chicken breasts, ham, swiss and alfredo sauce in my crock pot for tomorrow. (I will not post pics however due to possibly offending those higher on the cooking food chain than me).

Sounds good. I need to use my crock pot more often. I have a 1980's model Rival that works just fine.

I have a recipe that takes flattened chicken breasts, put ham and swiss and roll up and secure with a toothpick. Melt a stick of butter and pour over as well as season then bake at 350. I have also (thanks to mikelbr) put jar alfredo sauce over chicken breasts in my crockpot so I combined the two ideas. My family is all men and they will eat anything hot and I am assuming this is more tasty than hotpockets.
ETA: I eat way more vegetables/salads than they tolerate so I make yummy veggies and salads and make easy stuff for them.
