I've done both rock hard and partially ripe. Both work fine, but I like to start with the hard ones because I know people haven't been able to bruise those in any way.

Not sure on exact measurements but avocado, cacao/cocoa powder and maple syrup or honey/agave.

Here is a suggestion that may generate controversy - not intended.

We like Guacamole and buy avocados six or seven at a time from Sams. We carry them to ripeness in a bag or Tupperware bowl then peel them and mash them up to big chunks size, sprinkle lime juice on them and freeze them. Works great for Guacamole. Have maybe four cups of frozen Avocados in the freezer right now. If we want less then in the freezer bag, just spoon some out and plop the rest back in the freezer. The Avocado folks in California sell frozen pulp in big bags to quantity food operations. If you don't mash the pulp up you get nice chunky guacamole from it. I hate the runny mashed potato/baby food consistency stuff.

haven't done that. But, i've made chocolate balls. melt chocolate and mix with avocado in a blender. freezer for an hour to help firm up. shape into balls. we add coconut slices and sliced almonds to ours and then coat them in coconut flakes. We then freeze them.

they are pretty delicious.

I don't have much of a sweet tooth but id love to try this. I like weird combinations.

I've seen frozen avocado at Restaurant Depot. How's it taste compared to fresh?

The best avocado is perfectly ripe fresh fruit. Having said that, Frozen pulp makes nice guacamole especially if it has been left in chunks. I say that because I hate the baby food consistency guacamole some places serve. Always enjoyed sampling the frozen pulp samples available at national restaurant show in Chicago.

Is the NRA next week? Yes or maybe the week after that. I don't go anymore but it ways fell in the weekend of the wife's birthday. For those who can get a ticket it is a must attend event. Beer , Wine and Liquor sample row is a real trip.

Wow, those look great! I will definitely be trying that soon. Thanks for the info.

The avocado pudding is always a hit wherever I bring it. Now that I think of it, I think there also my be a touch of almond/rice milk in the recipe.

That's about as problematic as those people that think cilantro tastes like soap. A culinary tragedy.
