Need some ideas for a boneless Boston butt

I bought 2 almost 9lb butts to smoke for pulled pork and when I cut them out the package is when I realized they were boneless. I bought two more bone in to smoke and now I have 18lbs of butt to figure out what I want to do with it. Any of y'all have good recipe ideas?

Dice it and braise it chili verse.
Make rillettes.
Grind it and make Italian Saudage or Chorizo and breakfast sausage

Season. Sear. Add chopped onion. braise (covered) in 2 bottles dark beer of choice at 325F for 5 hours. Serve w/rice or veg of choice. Delicious.
ETA: check occaisionally and add more beer if liquid gets too low. Don't add beer late in cook though.

Cut them in half if you need to, season them, and put them into a crock pot on low for about 8 hours. Onions, garlic, perhaps a touch of cider vinegar, and chicken stock about halfway up the meat. Afterwards I'll fill up a sink with cold water and let the crock pot inert cool, then I'll put in the fridge. The next day I'll scrape off the fat from the top, reheat, and have a delicious dish.

Couple good sounding ideas so far. I'll post up in here results of what I do with them.

Why didn't you just smoke the boneless ones? I know the bone adds flavor, but damn.

Cut slits in it and stuff with the Trinity. Season well, brown and simmer in pork stock. Serve with rice.

Because it was late at night. I didn't have a way to tie it up. I figured it would flop all open and overcook in spots and be a mess to get off the girl.

So you like a lot of junk in the trunk?
I like to cook the boneless in the oven until tender but not as far as being able to pull. Slice like prime rib and serve with baked apples. Season anyway you normally would and make a pan jus with the drippings. Roasted potatoes, turnips and carrots or beers with is as well.

Not sure if you have one, but I did a boneless butt sous vide the other day. Brined for 10 hours and then cooked for 24 hours at 160 degrees. Quick sear with a torch. Very tasty but different from smoking.

Stick one in a crock pot with a bottle of mojo criollo marinade on high for 6-8 hours. Serve with black beans and rice.
