Agree, don't marinate a steak. Save marinade for a cut like skirt or flank. Pat your steak dry, oil it lightly, and use a dry seasoning if you want extra flavor.

And make sure you sear it well to lock in all the juices.

absolutely. need some cilantro and red wine vinegar for it to be a true "chimi" but yes i do the same.

I'm doing a chimichurri flank tomorrow for dinner, should I make the chimi tonight and let sit in the fridge?

Mix up the chimi and use half for the marinade, the rest for the sauce tomorrow.

I generally don't like to marinate a tender cut of beef, but to each his own.
How about trying this. Get a nice steak, ribeye or strip, and bring it to room temp and then salt and pepper it. Right before you put it on your smoking hot grill, get a little expresso powder and sprinkle on both side and grill to the temperature you like.
Enjoy the difference.

I don't use it but I have tried the Weber steak seasoning at it was excellent.

This jerk marinade makes an awesome ribeye. I've used it several times. Use a good charcoal grill to do them correctly ( and I rarely grill a steak).

Yeah don't do this. It is how you get sick. If you want to make a sauce reserve some of the marinade in a separate pan from the meat. Discard any marinade that raw meat has been soaking in.
And for others cilantro, while some call for it, is not authentic Argentine chimichurri. Use oregano, parsley and red wine vinegar.
