Why is it that some of the best beers you make are the ones you end up having to give away at festivals?

Really happy with both beers I'm bringing tonight to Brew at the Zoo. Need to find time to brew both again to keep at the house.

You were probably just gonna ruin it with Brett anyway, so it sounds like you saved yourself some time.

I'm really happy with the two sours I'm bringing.

The Oat APA and DIPA I'm bringing were beers I brewed trying out some new equipment/techniques. Both are ok, nothing great.

I need to brew a 100% brett all Mosaic beer for Zapps. I'll call it 'Running Funk: Band-Aids and Onions'

Was planning on brewing it next week.

In fact, I just got the ground Valencia orange peel and ground coriander in the mail yesterday from the spice source the used for the original blue moon.

This stuff smells great, but I'm not sure it will give it that citrus kick I want. May have to add some fresh orange zest to the carboy after fermentation dies down.

I have TONS of these spices if you want some.

eh, not too worried about the spices. Thanks though.
Really not planning on trying to try to clone blue moon, just interested in trying to brew a split batch of a wheat beer and a Gose for personal consumption.

Go ahead and hit it with a bunch of Crystal 60 as well for the trifecta.

I'm not really sure how I'm going to go about that.

I was thinking of bringing the full volume up to a boil and then after the hot break run off 6 gallons into my HTL, chill that, throw it in a bucket, and continue the rest of the brew day as normal.

It seems simple so I'm sure I'm missing something, but I don't know what/where.

I am coming up a half gallon short with my pre-boil volume kinda regularly now, but previously my efficiency was good enough I could add water to the wort to bring it up and it would be at the gravity I wanted.
Last night I was short volume and low on gravity.
It was the first time that I tried changing my mash ph with lactic acid. I added 3 ml of it, according to the recommendation from the brewing water sheet I used. Not sure if that caused the efficiency issue or not

TL,DR: doesn't matter, made beer

So i got a chance to try my IPA this weekend...and it is awesome! I finally have an IPA i'm happy with. Gave it to a few friends at my son's bday party over the weekend, and everyone really enjoyed it. Has a nice haze color, and the citra/amarillo really shine in this one.

On Saturday I decided to brew an English Mild on Sunday with extra/old ingredients I had lying around the house. When I cleaned out all my old grains a month or so ago, I realized I had just enough stuff to piece together an English Mild so i held onto all the necessary pieces. I bought a lb Fuggle hops from an only retailer on sale which came in on Friday. I had a slant of Irish Ale yeast from Omega Yeast Labs which I put into a starter that I made from 1.5 lbs of Wheat malt that I had (was out of DME). So the recipe looked like this for Sunday:

7 lbs Maris Otter
.5 lb C60L
6 oz Brown
6 oz C120L
4 oz Chocolate

1 oz Fuggle 60

OYL Irish Ale

I realized real quickly that I was going to run out of propane but I wasn't that concerned. I managed to make it through the mash and 30 minutes of the boil before the propane died. I thought about bringing the beer inside but after checking the gravity (1044) and the volume level (5.5 gallons or so) I just called it a day.

Easy easy easy brew day. Sped it up as fast as I could. 35 min mash, quick hybrid sparge, 30 min boil, dropped the temp to about 85 then threw it in the chill chest to drop to 70 and pitched last night before going to bed.

Bought ingredients to brew a hoppy wheat Saturday, so I could brew Sunday. But instead, I went to Germanfest at Robert's Cove with the wife and kids since her great-great-grandfather was one of the original immigrants that settled there.

So, looks like a weekday brew night is in order this week.

I made the mistake of not having anything ready to keg after Brew at the Zoo wiped out my inventory.

I've still got my Brett starter and hope to get by the brew shop on Thursday. I'm going to try and brew a Brett Double IPA based on blend of my Brett Pale Ale and this Double Jack Clone.

I'll use Belgian Munich instead of German Munich and will add in some oats. I'll slant my hop additions more towards flameout and beyond. I'll also try not to spill this batch!!!!!!!!!!!!!

I need some Brett IPA coaching. My 2 tries have been pretty bad. My latest has a very sharp, alcoholic or lighter fluid taste. It has only been in the fermenter for 3 weeks so I am hoping more time will help. I pitched a 1 liter starter I built up from some Wicked Weed dregs. The starter had a nice taste and aroma. The base wort was 2 gallons from a Zappa Dust IPA which included 5% Wheat and 10% rye. Any thoughts ?

Hmmmm, that is the same issue I had with the Zappa Dust collaboration that we did when I fermented my portion of the wort with my house blend. What are the IBUs on that? I've brewed with both wheat and rye in my Brett ales with no issues. It has mostly faded but is still every so slightly present. I'll get your bottles to you at some point here in the future.

The 2015 crop of pellet hops are starting to hit online...

Anyone interested in splitting shipping on an order from Yakima Valley once a few of the more popular varieties (Citra/Simcoe/Amarillo) become available?

How long, in the freezer, does a properly stored bag of hops hold it's aroma/flavors?

I wouldn't mind going in on some simcoe or mosaic, but i brew about once every month and a half, so anything over 4-6 oz. is sort of a waste, depending on what i'm brewing.
