I'm a believer in John Folse's recipe for the heads, just cut back on the thyme and used 5 lbs of seasoned tails I peeled from boils throughout the season.
Ran out of heads at 210, so I stuffed a few crab shells I had.

Frozen in bags of 25.
For the pot of bisque 'sauce'? itself, I adjust the Folse recipe to my liking also.

Question. Does everyone stuff by hand or do some of you use a pastry bag? Never tried that route.

Does it expand the shells at all or just fill minimally?

You really put in some work! The recipients of the fruits of your labor are damn lucky.

You can fill as much as you wish. Bag in one hand, shell in the other.
