Been over to Dryades for a quick lunch plate a few times and also once or twice for a happy hour beer ($3 local craft drafts). The hot food bar is really impressive and a good value, I know the director just left and they are struggling to make the concept work, but no matter what they better keep that chef and hot food bar.

I do like that Rob working in some lower carb sides. Brisket chili and then today he showing greens.

Had this lunch the other day. Sausage was ordinary and won't be tried again. The dude makes good brisket though. I liked the chili.

Glad I got there by noon. Was sold out by 2:30 pm.

I hope those bartenders have night gigs too because they surely aren't making a living being behind the stick a few hours mid-day.

Was in line at 11:50 when they announced no more burnt ends.

Brisket chili was delicious though

Most everything I had was good, save the greens, but I wasn't gonna freeze my arse off waiting outside for the door to open just to get the burnt ends.

If he is selling out every day by 12 or one, why not just cook twice as much food and sell out at two or three?

Makes no sense to me. Surely most of those pits aren't being used then.

Franklin has like 5 big smokers, maybe more now. Him selling out means he is selling a massive amount of meat each day.

Exactly, Franklin is probably the most famous BBQ place in the country. You would think a place just opening would try to accommodate their customers. I'm not driving to central city to hope that they still have burnt ends available.

This Instagram post is saying they are smoking as much as they can hold. Time to add another smoker just for those burnt ends then.

why not stagger items? Maybe halfway through the first cook add more items to the other smokers, then once the first stuff comes off, put more on and that will come off after lunch ends, and then the same with the fourth batch. Seems there is one batch and then bam, nothing.

I know it's great bbq, just seems there has to be a way to make the food last all day. I have seen this going on at the joint, they cook food all day, maybe they do reheat. But I can go there any time of day and get bbq.
