I don't understand why hummus has made such a huge jump in popularity in recent years yet baba ganoush remains relatively unknown . I guess it has something to with the latter bein more difficult to prepare.

I am curious about which of the two this board prefers. Feel free to post your favorite recipe for each as well.

hummus vs salsa would have been a closer competition imo

I thought of the two because they are very similar and one is in every grocery store and the other probably 9 out of 10 people have never heard of.

Baba ganoush can't have the shelf life of hummus

Eggplant is likely a more expensive and seasonal ingredient, which has to be roasted fresh, compared to chickpeas that are like a commodity. Then the shelf life would also affect price and availability.

I like both and prepare them at home. Even then, the hummus is easier to make.

I have cheated and bought Sabra Hummus at Sam's. It's like $5 for a giant tub of it.

I bought some canned Baba ganoush once, but it was not very good and you still had to add lemon juice, garlic, and olive oil.

Even bad hummus is usually edible. Baba ganoush can be downright terrible: gross and full of fake smoke if the maker can't be bothered to actually char the eggplant, bitter as heck if big, seedy eggplants are used, slimy if it sits around too long. I love the stuff, but I've had some awful renditions.

Hummus in general but the baba gannoush at Acropolis in Metairie is better than any hummus I've had.

Mad some homemade hummus for the first time Memorial Day Weekend. Used:

Two cans of No salt added Garbanzo Beans
1/3 cup Tahini
Kosher Salt
Four Garlic Cloves
6 tsp lemon juice
2 Tbs of Garbanzo bean juice

Use a food processor and hold out a quarter of the 2nd can. Once the rest is processed, mash up that 1/4 can a bit, but don't try too too hard. Dump it in, mix it up and then pop a little EVOO and Paprika with some cracked black and a few red pepper flakes.

We had Albasha's yesterday and we always get the hummus. It was ruined for me by making that homemade version two weeks ago. So much so that I stopped off for two more cans of no salt added Garbanzo's this afternoon from Rouses. LOL

I prefer baba ganoush, but as stated, it can be ill prepared and when that happens, it's inedible. Shaya's is divine.
Hummus is more forgivable.

I agree.

By the way, does baby ganoush still talk about his dad?

I prefer baba ganoush and find it easier to make at home than hummus. I never can seem to get hummus right but Baba comes out good all the time for me.

Chef John
Haven't tried this one, but chef john is usually a good starting point.

I like both, but hummus is more popular because its easier and cheaper to produce. People think its healthy, but producers usually use a lot of fat to get it to taste good. Don't get me wrong I can crush some sabra. I will take a well prepared lebna over hummus.
